Mama Jeanne’s Stuffed Peppers

  • 1 lb of ground beef
  • 1 can of diced tomatoes
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 cup of cooked rice
  • 1 tsp of Worcestershire sauce
  • 2 cups of cheese (separated)
  • 4 or 5 big peppers

First, preheat oven to 350° F. Switch gears to the stovetop and fill a pot with water and bring the water to a boil. Once water reaches boiling point, add the peppers and let boil for 10 minutes. Next, cut the tops off of the peppers and clean out the seeds. In a large skillet, brown the beef, then drain the excess oil. Enhance the beef by adding the diced tomatoes, salt, pepper, rice and Worcestershire sauce. Allow mixture to simmer for about 15 minutes. After the mixture is finished cooking, it’s time to stuff the peppers with the beef mixture and top them with cheese. Finally, place the peppers in a casserole dish and bake them for 30 minutes in the oven. Enjoy!

This recipe is a family favorite passed down from my mother, Jeanne. When I make her famous stuffed peppers for my family and friends, I am instantly transported back to my childhood because my mom frequently made them when we were growing up. My family enjoys when I resort to this comfort food since it’s easy to make and all in one dish. Just add a side of bread and you’re good to go!
